Eating Like @earthyandy for 24 hrs

I feel like when many people think of veganism, they imagine the young hawaii- living Andrea Hannemann, or Earthy Andy, on instagram. After searching through her website, I came across a few lists of what she likes to eat in her day to day life. At first glance, I noticed her diet consists of mostly raw fruits and vegetables, which differ slightly from my usual diet of sautéed and baked foods. Here is my attempt to eat like her for a day!

Breakfast

Today for breakfast I decided to have what Earthy Andy is most known for: her thick and creamy "nice" cream. Going off a few of her recipes and measuring by eye, I decided to blend together frozen mango, pineapple, banana, kale, and oat milk. By first blending without liquid, and then adding in oat milk little by little, my breakfast was the consistency of a creamy sorbet, and kept me full until lunch.

Lunch

One of the main differences I have noticed between Earthy Andy's diet and my own is her portion sizes. Since my everyday meals consist of protein rich foods such as chickpeas and tempeh, I need to eat less in order to properly nourish my body. With Earthy Andy's lunch recipe, she called for four rice cake thins topped with avocado, cherry tomatoes, red onion, and sprouts. Furthermore, she eats a side of strawberries along with with veggies and hummus.

Dinner

For dinner, Earthy Andy said she loves to have a huge salad filled with whatever greens and veggies she has on hand. I decided to fill my salad with romaine, peppers, red onion, and avocado topped with my favorite asian dressing.
