3 Healthy Desserts

During social distancing, I find my main passtime is creating and trying new recipes. Here are some desserts I have been making that are vegan, gluten- free, and health conscious.
Mango Sorbet
I find sorbets to often be filled with unnecessary sugar or high fructose corn syrup. You can use this same recipe with tons of different fruits, but I find mango to leave you with the best consistency.
What You Need:
- Frozen Mango
- Vanilla Extract
- Non- Dairy Milk (I used this oat milk: https://bit.ly/3ca5G3P)
- Optional: Agave/ Honey
What You Do:
1) Pulse high the frozen mango without liquid (as shown the second picture). This is going to allow the sorbet to be smooth and creamy when the milk is added.
2)Add milk, vanilla, and honey/ agave for extra sweetness if you wish
3) enjoy your healthy sorbet alternative :)
Peanut Butter Brownies

The thing about these brownies that allows them to be healthier than most is surprisingly chickpeas. Although I've tried many desserts using chickpeas, I find brownies to be most similar to the real thing. Plus chickpeas add protein, iron, and vitamin B.
What You Need:
- 1 can chickpeas
- Chocolate Sauce (warm 1/3 cup non dairy milk + 3 Tbsp maple syrup, then add 1/2 cup vegan choc chips)
- 5 Tbsp coconut sugar
- 3/4 cup peanut butter ( I used this one: https://bit.ly/2JiXZMy)
- 3 Tbsp cocoa powder
- 1/4 cup oat flour
- 2 tsp vanilla extract
- 1/4 tsp salt
- 3/4 tsp baking powder
- 4 Tbsp chocolate chips (to fold in)
What You Do:
1) Put chickpeas, peanut butter, coconut sugar, cocoa powder, vanilla, salt, and baking powder into a blender or food processor. Blend for 30 seconds/ until smooth.
2) Add chocolate sauce and oat milk. Blend for 30 seconds/ until incorporated.
3) Fold in 4 Tbsp chocolate chips
4) Transfer to baking pan (I used a 9x7x5)
5) Bake at 350 for 25 minutes. Let cool for 10 minutes before serving
Nice Cream
As a lot of ice creams are loaded with sugar, artificial flavors, and unhealthy fats, this ice cream uses frozen avocados as its base. It's really easy to just eyeball the measurements, but try to keep the base as thick as possible.
What You Need
- frozen avocado (you can chop up a fresh one and freeze it, or buy it prefrozen)
- oat milk
- maple syrup
- cocoa powder
- vanilla extract
- chocolate chips
- flavor variants: I used crushed peppermints for my first flavor and peanut butter for my second
What You Do:
1) Add the frozen avocado to a blender or food processor. Blend until fine.
2) Add oat milk, maple syrup, cocoa powder, and vanilla extract. Blend until smooth.
3) Fold in chocolate chips and a flavor variants.
4) Enjoy :)
